How do you tell the difference between a 250 and a 292 head? '67 thru '74 would be a good vintage range to limit the discussion to. I had always assumed the 292 head had stronger springs, bigger valves and maybe larger chamber volumes. I've never owned a 250, so I don't know first hand. In the junkyard, is there any telltale marking to look for? I know they're the same casting, but how can you tell them apart?
What happens when you put a 250 head on a 292? And what if you put a 292 head on a 250?

There's no difference to speak of. If you look in Tech Tips at Head volumes you will find that combustion chambers will vary slightly not enough to effect your compression significantly. The exception is the 194 which will increase your compression to aout 9. something.
