I am rebuilding an originally EFI straight six and converting it to carbureted and need some tips on improving the fuel economy and averall performance as well as a good reference site i could use to look up torque specs and engine configuration so i can get this project finished.

Flathead, The best tip I or anyone can give you is to head over to www.fordsix.com. There in the 240 / 300 forum you will find everything you are looking for. Also, try your local library - most have shop repair manuals and larger ones may even have actual shop manuals. Good luck. You picked an awesome engine to build.
